How do you check how much money is on your oyster card?

You can check your balance at the machine, just touch the card on the sensor and your balance should appear on the screen. Also your balance should be shown each time you use your card at a tubestation, not sure about buses but my balance was always shown when I was going through the barriers at tube stations.
