Have you ever successfully had a platonic friendship with an ex?

I have never been able to make it work. In this case because you have a lot of time since you were together and the relationship was short, it very well could work. As a rule for me the whole "staying friends" thing is ridiculous, but you have a unique situation here where it may be ok.
